Default Moroccan Lentil and Garbanzo Bean Soup

I made this last night. Very tasty and great for cold nights. Don't let the longish ingrediant list be intimidating, its actually not hard to make (mostly some chopping and dumping in a pot).


˝ cup olive oil
1 large onion, chopped
5 cloves garlic, chopped
1 Tablespoon grated or minced fresh ginger
2 teaspoons ground coriander
2 teaspoons smoked paprika
1 teaspoon ground cumin
1/2 teaspoon ground cinnamon
1/8 teaspoon chili flakes or cayenne
3/4 cup minced cilantro
˝ cup minced parsley
8 cups vegetable broth
1 can garbanzos, washed and drained
1 cup lentils, rinsed
1 28 oz can crushed tomatoes
˝ cup orzo
4-6 oz baby chard, kale, spinach or similar green
˝ teaspoon salt
˝ teaspoon pepper
2 Tablespoons lemon jice
lemon wedges

Heat the olive oil in a stockpot and saute the onion for 7-8 minutes. Add garlic and ginger, saute another minute. Add spices, saute another minute. Stir in ˝ cup of cilantro and 1/4 cup parsley, saute another minute.

Add broth, garbanzos, lentils, bring to a boil and then simmer for 12 minutes. Add tomatoes and ozro, bring to a boil and then simmer 5 minutes. Add greens, salt and pepper, simmer another 5 minutes. It will be thick soup. Turn off the heat, stir in the lemon juice and remaining cilantro and parsley. Serve the soup with lemon wedges, optional. Also good with fresh crusty bread, like ciabatta.

Variations–add lamb/beef/chicken. Use fava beans instead or combo’d with garbanzos. Use rice instead of orzo. Make more piquante with harissa or other pepper blend.

Serves 6-8
